A Little Thai Asian Flare
I made a new supper dish tonight and 4 out of 6 Herman's enjoyed it. While perusing through the gourmet food selections, I found a Thai curry spice blend and purchased it. I have been meaning to make a Thai flavored meal for a while and decided tonight was the night. I sauteed onion and fresh garlic in some olive oil and then sprinkled my spice blend into the mixture and let it simmer down for a while. I then added a bag of frozen vegetables that included orange peppers, red peppers, broccoli and snap peas. I opened a can of organic coconut milk and poured it in the pan on top of the vegetable mixture and let it simmer until the veggies were soft. In the mean time I cooked a pot of brown rice and when it seemed the vegetables were nearly done, I mixed the rice with the vegetables and coconut milk blend. I let it soak in the rice a bit and mix up really well. It was a creamy, coconutty, mild spicy sauce with lots of fresh nutty rice and tasty vegetables. I thought it was pretty delicious!
